Edible Art: Banksy Inspired Brownies

These easy cream cheese brownies were inspired by the shredded Banksy artwork “Girl With Balloon”, and you will want to quickly shred through these too!

On October 5th 2018, the Banksy print “Girl With Balloon” hit a record amount at a Sotheby’s auction for $1.4 million. Immediately after the auctioning of the work was complete, the frame started to shred the artwork. When I saw it happening, I laughed my ass off. Way to stick it to the 1%, was my initial reaction. And then, of course, the artwork was deemed even more valuable because, Sotheby’s says, it’s “the first work in history ever created during a live auction.” Then I just wanted some brownies.

Thus these Banksy inspired cream cheese brownies, featuring the mentioned artwork. Just in case you aren’t caught up on who and what I’m referring to, mom (<3), here is a quick catch up. Banksy is an unidentified street artist known for his dark humored graffiti. One his most iconic works is “Girl With Balloon”, created with a stencil technique. Murals of her began showing up in London around 2002, all of which have been painted over, or chipped off and sold. At first glance, one could assume the girl accidentally lost the balloon and is reaching out to get it. But look closer and you’ll see she’s intentionally let go of it. Loss of innocence? Growing up too fast? Letting something beautiful go to be free?

Not really Banksy’d Brownies

To create this destructible art, I worked with ingredients and decor I had on hand. A box of brownie mix, cream cheese, and decorative edible gel. I wish I had some edible spray to fully take on Banksy’s technique of stenciling, but I’ve had bad luck with spray bleeding (dripping beyond the stencil) in past cake decorative projects.

First, I mixed the brownie batter according to the box directions, and poured it into a greased 13×9 baking dish. Then I whipped the cream cheese with sugar, an egg, and almond extract until completely combined. I poured it over top the brownie mix, and smoothed it all over to create a blank canvas.

Next, I wanted to try and create lines to mimic the shredded lines in the Banksy canvas. I used a fork to drag through the cream cheese to expose and pull up some brownie batter from below. It didn’t work how I hoped, but hey, neither did Banksy’s original intention* with the print shredding! 😛  (*Banksy’s whole artwork was supposed to shred, but only half of it did.)

After it baked and cooled off came the fun part! Using a print out of the Banksy art, I eyeballed it and used Wilton’s Sparkle Gel in red and black to recreate “Girl with Balloon” on top of the brownies. I used a paintbrush and chopstick for fill-ins and fine lines. 

If you aren’t comfortable with eyeballing and free hand, you can make a stencil. An easy way to do that is glue the design onto card stock paper, and cut the design out with scissors and/or exacto knife. I suggest card stock because of it’s durability in being sprayed or gelled on while decorating. Once you have your stencil, place it on the brownies, hold it down firmly, and use edible decorative spray or gel to fill in the design. Pull up the stencil, and voila, Banksy’d brownies.

So now that “Girl with Balloon” was on the brownies, it was time to destroy them. Unable to put a plate of brownies through a paper shredder, I opted for a butter knife. And just like that, they became “Love is in the Bin”* brownies. (*What the artwork was renamed after the infamous shredding.)

 1 box Brownie mix
  cup oil
 ¼ cup water
 3 eggs
 8 oz package of cream cheese (room temp)
  cup sugar
 ½ tsp almond extract
 Black and red decorative food gel

Preheat oven to 350 F and grease a 13x9 baking dish.

Mix together the brownie mix, oil, water, and 2 eggs until completely combined.
Pour into the baking dish.

Beat the cream cheese in a bowl until creamed, then add 1 egg, sugar, and almond extract until completely mixed. Pour on top of the brownie mix and smooth it all over top.

Using a fork or knife, drag it through the cream cheese layer to make lines with the brownie mix. Bake for 35-40 minutes.

Once it's cooled, use the decorative gels to recreate your favorite Banksy art.
