Inspiration can be a funny thing. Like when you catch a whiff of your neighbor’s dinner cooking and it reminds you of your childhood so you start writing. Or you see a crazy cloud formation in the sky that reminds you of a song and you start dancing to the music in your head. I’m going somewhere with this. What inspired me to make these sprinkle packed vanilla pudding cookies?

Potty training.

All right, scroll on down to the bottom for the recipe if that just goes over your head. Seriously though, since we went hardcore with the potty training, I decked out the bathroom with donut wall decals, sprinkle art, sprinkle flooring, donut soaps, basically it’s sprinkle themed. Why? So that it’s a fun inviting space to hang out on the potty, wash hands, brush teeth, yada yada, you know how a bathroom works. And now so does my toddler. I’ve been putting pudding mix into a lot of my sweet baking recipes lately and have tampered with the amount of granulated sugar regular recipes call for. I found I could use a little less sugar and still get a good consistency in my cookies.

 2 cups all purpose flour
 ¾ cup granulated white sugar
 ¾ cup butter (room temperature)
 1 egg
 1 tsp baking soda
 ½ tsp salt
 1 tsp vanilla extract
 1 box of instant Vanilla pudding (3.5 oz)
 ½ cup sprinkles

Preheat your oven to 350, and line a baking sheet(s) with a slip mat or parchment paper.

In a standing mixer, beat the butter and sugar for 2 minutes on medium speed. Add the egg, baking soda, salt, and vanilla extract, and mix until combined. Add the pudding mix and mix that until combined.

Turn the mixer speed to low, and add in the flour until combined. Scrape the sides of the bowl down if needed. Once combined, add the sprinkles until incorporated throughout.

Scoop the mixture into about a tablespoon size ball and plop the dough onto the parchment about 2 inches apart. Bake for about 10 minutes (oven times will vary.)

Allow the cookies to cool for a couple minutes on the pan before transferring to a wire rack to cool completely.
